Fiber-filled and Taco Tuesday-inspired, this salad is colorful, healthy, and delicious. Enjoy as is, on tacos, in a wrap, and more.
Ingredients:
1/2 head of cauliflower, chopped finely
1 can of black beans, drained and rinsed
1/4 red onion, finely diced
1/4 cup basil, finely chopped (cilantro would be really good here too, but I didn't have it at the time)
1/2 red pepper, finely diced
Trader Joe's cilantro lime seasoning, or any sort of taco seasoning/spicy seasoning
Lime juice to taste
2 Tbs olive oil
1 avocado, diced
Directions:
1. Saute cauliflower in 1 Tbs olive oil and a few generous shakes of seasoning (I also used water to cook it more quickly, but it does disrupt the texture/flavor)
2. Add cauliflower, black beans, onion, pepper, and basil to a bowl. Mix until evenly combined.
3. Add 1 Tbs olive oil, lime juice, and a few more shakes of seasoning.
4. Add fresh avocado before serving.
5. Enjoy!
