Let's look at what a number of dietitians have to say:

Is It Actually Ok to Eat an Entire Pint of "Healthy" Ice Cream? Asking for a friend - Natalie Rizzo at Greatist
General consensus: Ultimately, choose whichever sort of ice cream that will help you most with your goals, digestion, and overall health. Low-calorie ice creams can fit into a healthy diet if that is what you choose to eat, but being low-calorie is not a green light for eating an entire pint, especially since these ice creams often have sugar alcohols and/or added fiber that may or may not cause gastrointestinal discomfort, which can be magnified when eaten in large quantities. Additionally, eating large quantities, regardless of ice cream type, still has the potential to feed into emotional/binge eating habits, so it is the habit and reasons behind it that would be best to address and focus on changing and healing from, rather than the food choice. A small amount of real ice cream may be just as, if not more, satisfying, but it depends on your own nutrition needs and likes/dislikes. I do, however, commend these companies for trying to make tasty and healthy dessert options.
