(Almost) One Pan Breakfast Casserole


This recipe is extremely easy. You cook once and then a nutritious breakfast is ready for you all week (or for a large family in a single morning)! Plus, the oven does most of the work for you. I look forward to having this breakfast every morning because it's delicious, I don't have to prep anything, and I feel good the rest of the day having started off with a heaping helping of vitamins, minerals, fiber, and protein. It does end up being lower in calories, however, especially if you choose turkey bacon over regular, so be sure to add other nourishing food as well if you are still hungry, such as fruit or bread (I love making buckwheat bread) with nut/seed butter.


Prep time: 15 minutes

Cook time: 35-45 minutes

Total time: 50-60 minutes

Serves: 6


Ingredients:

  • 2 cups brussels sprouts

  • 1 sweet potato

  • 3 carrots (optional)

  • 1 package bacon (I used turkey bacon)

  • 1 dozen of eggs

  • 1.5 Tbs Olive oil

  • S/P or your favorite spice blend


Instructions:

  1. Preheat oven to 400°F

  2. Spray a 9x13 casserole dish with cooking spray or rub with olive oil

  3. Chop ends off of each brussels sprout, quarter, and place them in the casserole dish

  4. Peel the sweet potato (and optional carrots), cut into bite-sized (about 1/2") pieces, and place in the dish along with the sprouts.

  5. Spread the vegetables evenly around the dish, drizzle with 1 Tbs olive oil and season with salt & pepper.

  6. Once the oven has preheated, roast the vegetables for about 20 min, tossing halfway.

  7. While the vegetables are roasting, follow package instructions for cooking bacon (I cooked mine in a pan on the stove-top using about 1/2 Tbs olive oil until crispy)

  8. Once bacon is done, set aside to cool and drain on a plate lined with paper towels.

  9. When the bacon has cooled, chop it into bite sized pieces

  10. Crack all 12 eggs into a medium sized bowl or large liquid measuring cup and whisk until combined

  11. When the vegetables are roasted to your liking, take them out of the oven.

  12. Add the bacon pieces and spread evenly around the dish

  13. Pour the eggs over the vegetables

  14. Bake in the oven for about 15 min, or until eggs are cooked all the way through.

  15. Enjoy for days!
