Hayden & I have been loving this recipe lately and have made it once per weekend for the past three weeks! Hayden thought up the idea when we were planning what to have for brunch with some friends. In his head he planned savory waffles, bruschetta, and avocados. Then, one of my friends had some brie, which ended up being the icing on the cake...well, waffle. I don't each much dairy, but the brie definitely takes this recipe up a notch, so it's worth adding if you can!
RECIPE
Serves: 2 large servings or 4 small servings
Ingredients
For the waffles:
Waffle recipe is adapted from this pancake recipe from Joy Food Sunshine.
1 cup rolled oats, made into flour
1/4 cup all-purpose gluten free flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp savory seasoning (garlic powder, all-purpose blend, etc.)
1 cup Greek yogurt
3 eggs
1-2 Tbs almond milk, unsweetened
For the bruschetta
1 medium tomato
1/3 small onion, red or white
1/4 cup chopped basil
1 Tbs balsamic vinegar
1 Tbs olive oil
1/4 tsp salt
1/4 tsp pepper
Toppings
Sliced avocado
Sliced brie
1-2 poached or fried eggs
Instructions
For the waffles
Preheat waffle iron
Add all dry ingredients to a large mixing bowl.
Mix until combined.
Add wet ingredients (yogurt, eggs, milk).
Mix until well-combined.
Add a cup of the mixture to the waffle iron.
Cook waffle until ready according to your waffle iron.
Repeat until all batter is used up.
For the bruschetta
Dice tomatoes and onions, add to a bowl.
Chop basil and add to the tomatoes and onions.
Add oil, vinegar, salt, and pepper.
Mix to combine.
To serve:
Place waffle on a plate.
Add slices of brie.
Add an egg or two.
Add bruschetta.
Add sliced avocado.
Enjoying these with mimosas is the best! (But optional)
